Summer Afternoons, Shrimp Salad, & Summer Dressings


There is something so wonderful about getting out and enjoying summer.  It gets extremely hot here in Texas, and since we live 10 minutes away from a great water park, we spend a lot of time in the cool water, and on the “beach.”  We love this set up, and wouldn’t trade it for the world….




I’ve been trying to find some delicious summer dishes to make that go well with the hot weather: Shrimp salad, Caesar salad, hot dogs made various ways….  Now that my appetite is getting better, I want to eat things that taste like summer….


Shrimp Salad:

  • 1 pound jumbo shrimp (deveined) cooked or grilled
  • sliced red and yellow tomatoes (to taste for your salad – I usually use two or three if its for just two of us… if I want left overs I’ll use about 5 tomatoes)
  • spinach leaves (enough for how many you’re planning on serving)
  • Diced watermelon
  • Diced cucumber
  • Diced goat feta cheese

Mix all ingredients, serve with shrimp on top.  Dress with something summery and tangy: Cilantro and lime dressing (cilantro chopped up and mixed with one lime’s juice in olive oil, or Asian salad dressing:

  • 3 cloves minced garlic
  • 2 tbs minced ginger root
  • 3/4 cup olive oil
  • 1/3 cup rice vinegar
  • 1/2 cup soy sauce
  • 3 tbs honey
  • 1/4 cup water

In a 1 pint glass jar or larger, combine the garlic, ginger, olive oil, rice vinegar, soy sauce, honey, and water. Cover the jar with a tight fitting lid, and shake well. Remove lid, and heat jar in the microwave for 1 minute just to dissolve the honey. Let cool, and shake well before serving. Store covered in the refrigerator. (from


  1. I loved your photos, especially one. The food looks great. My doc won’t let me eat exciting food. lol However my blood work was excellent this time.

  2. You´re one lucky woman to live there, actually your kid is the lucky one that he has the water park right next to where you live.

    Shrimp salad, yes. Do you guys, ( I don´t remember ever seeing it while I was in the U.S) get the shrimp as a whole, cold, as a whole meaning with the head, little tail, and the carcass around it and then peel it? Cause here in Spain is how we eat them most of the time. Actually chewing the head after you take it off is considered a delicatessen and I love it. Taking head off, little legs of, tail, carcass around it and then dip it in mayonnaise and into the mouth. All in a matter of a couple of seconds. It´s not that tradition in the U.S right?
